Brix Scale = number of grams of cane sugar dissolved in 100ml of distilled water.
Brix (Percent Sugar or Soluble Solids) Refractometers are primarily used in determining percent Brix (sugar) content of fruits, beverages, wines, jams, jellies, syrups, honey, and will also determine the maturity of fresh fruits. Brix can also be used to measure percent solids in solutions such as starch, catsup, egg yokes, concentrations of cutting oils, quenching oils and emulsification solutions, etc.
